Jambalaya risotto! Brown some andouille/chicken/shrimp/whatever is hiding in the freezer. Remove from pan. Add trinity and arborio. Cook until rice is toasty. Add creole spices, minus white pepper if you're me because it's the worst, and cook till fragrant. Add can of tomatoes, white wine, and start cooking using risotto method. When nearly done, add Worcestershire sauce, Tabasco,scallions, and proteins.
