Make a quick arugula pesto in a blender/processor with a handful of any nuts you have on hand, a clove of garlic, handful of warm, handfuls of arugula, and oil until its to your liking.

And then make any sort of risotto you like - I sweated some shallots with an anchovy filet, rendered pork belly & some red pepper flakes, before toasting arborio rice.  Add a splash of wine, continue cooking with chicken stock, and finish with a chunk of butter and more cheese!
