Panzanella. Even though it's 50° here in Minnesota, as far as I'm concerned it's summer so panzanella for lunch! ?☀️ toss some stale bread, shallots, and peppers with olive oil, salt and pepper, then bake until the bread is golden brown. Then toss with a vinaigrette (I used some mint and honey in my balsamic vinaigrette, but red wine vinegar and basil works nicely too!) and some tomatoes and that's it!
