Leftover quinoa and shredded beet burgers!

Sauté a diced onion with garlic, season with salt, about 10 minutes. Add shredded beets (3 medium size beets) and sauté for 10 more minutes. Combine onion and beet mixture, quinoa (about a cup), chopped cilantro, one egg, cumin, lime juice, pinch cayenne, and enough flour to make the burgers form nicely (about 1/2 cup)
Heat oil in skillet and fry each side of your burger for 2-3 minutes, until a golden crust forms. Enjoy!
