Tamarind coconut chicken curry! #notconest #dinner
Sauté some onions with a couple of bay leaves and a cinnamon stick until soft and translucent. Add a dash grated ginger and garlic, a teaspoon of turmeric and red chili powder (more if you like spice), and stir until fragrant. Next add a few chopped tomatoes and cook until tomatoes and onions melt into a thick sauce. Throw in some chicken pieces, a can of coconut milk (unsweetened), a knob of reconstituted tamarind, and cook until the coconut sauce thickens up and the chicken cooks through. Add salt to taste.
Garnish with cilantro, and serve with basmati rice and a wedge of lime!
