Fried rice packing umami punch from the addition of smoked trout skins. Stir fry a knob of ginger with diced trout skins (just removed from the fish of a package, salmon would work too). Add veggies of choice then rice and 2-3 scrambled eggs over medium high heat. Garnish and serve (I used scallion greens and kimchi).
