Enchilada lasagna: use corn tortillas instead of noodles and enchilada sauce instead of tomato sauce. Fill layers with meat and vegetables and shredded cheese of your choice. This had roasted chicken, caramelized onions, sautéed peppers & corn, and jack cheese.

It's super easy! I warmed the enchilada sauce a bit (canned sauce) and sautéed the veg then just layered everything. Put in a 350 degree oven for about half and hour. Only thing I'd change is to add more cheese - I was a bit skimpy with it.
