Shakshuka! Cook down an onion, a couple cloves of garlic, a red bell pepper, and a small eggplant until soft. Add in tomato paste, bay leaf, cumin, cayenne, and any other spices you see fit. Add in a can of diced tomatoes and let simmer for a while. Make a couple holes in your stew and crack an egg in each, then cover and let steam for a bit. Top with feta and parsley and serve with toasted pita!
