One of my classic frittatas, heat olive oil, add chili flakes, add in chopped, salted potatoes, cook until softened and sightly brown, add in thinly sliced onions and chopped garlic. Today I added unpasteurized OJ to deglaze and help caramelize the pan. Beat best quality eggs (6 today) with half and half, jalapeño/garlic chutney (homemade), salt, pepper, dried oregano & basil, nutmeg and add after OJ has cooled down a bit but not before potatoes start sticking to bottom of pan again;). Cook till almost set, toss arugula on egg mixture and top with mozzarella- finish with salt and pepper and broil until brown. Finish with olive oil after taking out of oven. #classic #breakfast #brunch #frittata #norecipe #vegetarian
