Classic Ruben! I pressure cooked a three lb. corned beef for one hour in about two cups of straight kosher pickle juice. Quick released, sliced and stacked on toasted marble rye with melted jarelsburg, homemade sauerkraut and my own Thousand Island (which is just equal spoonfuls of ketchup, mayo, relish and horseradish)
