Our Test Kitchen Chef Josh Cohen wants you to know how user-friendly cooking squid is! He tossed these in olive oil, salt + pepper, singed them in a super-hot grill pan, and finished with a squeeze of lemon. They could have been sliced up for a salad with red onion, capers, chiles + parsley à la Motorino, but they were all eaten before they could get there.
