Broccoli pasta for two
Boil 250g broccoli florets in a BIG pot of boiling, heavily salted water for 8 mins (you will use this pot/water for the pasta as well). While broccoli cooks, gently sauté 1 small onion (or 2 shallots) in olive oil for 5 minutes.
Remove broccoli from big pot using a spider skimmer or equivalent and add right to the onion. Sauté for another 5 minutes. Add 1/4c cream. Transfer mixture to food processor, pulse until combined.
Add 250g spaghetti to the big pot and cook until al denté. Drain, reserving 1/4 cup pasta water.
Add pasta, pasta water and sauce back into the big pot and stir to combine. Portion into bowls and grate a LOT of Parmesan on top.
