My take on a Lidia Bastianich's cauliflower and rice soup. Sauté lots of chopped onions, carrots and celery until translucent -I tried avocado oil and liked the neutral taste. Move veg aside and add a big wallop of tomato paste and stir until fragrant. Add a small can of chopped tomatoes and enough water or chicken broth (I used chicken broth) to make a soupy consistency. Simmer for 10 minutes, add one head of cauliflower cut into florets and about 1/4 cup uncooked arborio rice. Add salt and pepper to taste. Cook 15 more minutes and serve with grated pecorino and a glass of Zinfandel. #nocontest #dinner #healthy
