MY FAVORITE BIRTHDAY RASPBERRY MUFFINS
I never liked cupcakes as a kid, so my mom would bake and send me to school with Silver Palate's raspberry muffins. Brown sugar and pecan topping and gooey berries on the inside.
Soft flour, white sugar, dark brown sugar, salt, baking powder, and cinnamon. Add melted butter, milk, and an egg. Mix just until combined. Fold in raspberries and lemon zest.
Topping: brown sugar, pecans, flour, a little bit of butter, cinnamon.
I like to mix it up by using orange or lime zest instead of lemon.
