The faux-est pho! Throw some star anise, ginger, clove and coriander seeds into a quart of chicken stock. Simmer for a while. Add some leftover roast chicken and some blanched rice noodles.
The accompaniments are certainly not traditional but provide the spice and herbaceous-ness and crunch that befit a bowl of #pho.
In this case, we have some cilantro, some radishes (both regular and watermelon!), snap pea pods and cilantro. Didn't have mung bean sprouts, so pea shoots and alfalfa sprouts had to do. Some lime and jalapeño to keep it traditional-ish.
