The main filling: lentils cooked in salted water, then sautéed with diced onions and garlic, salsa spice, chili powder.
To the left, sautéed white mushrooms with a splash of red wine vinegar about half way through cooking for an extra zing.
To the right, California rice mix from trader joe's.
I also made some guac with lemon juice, diced pearl red onion, salsa spice, salt and pepper.
(The middle round dish is just a can of black beans heated up, next to that, black olives. ? can't do it all, amirite?)
