Cheesy, herby, oniony, eggy, leftover rice thingy - inspired by linnylot and Marian Bull's green rice
2 generous spoonfuls chopped green leafy herbs, cilantro, parsley, whatever you have
2 generous spoonfuls chopped onion or scallions or ramps or other green oniony things
1 cup cooked, leftover rice, clumps broken up
1 cup shredded cheese, any kind
2 large eggs
3 glugs (about 1/3 cup) cream/milk/half n half, anything
Mix everything together. Season with salt and pepper. Pour into a well-greased 6" cake pan, oven-safe skillet or casserole. Bake at 350F until set and edges get golden, around 20 minutes. Turn out to a plate if you want to. Or not.
