Sweet potato ginger butter 4 c peeled sweet potatoes cut into 2 " chunks, 1 c apple cider and 3 tsp fresh ginger in med. saucepan simmering for 20 min. Sweet potatoes soft? Great! Blend until smooth add back to pan with 1/2 tsp nutmeg and 1 T molasses Cook another 15 min until stuck to a spoon. Cool and put into a glass lidded jar, enjoy on your crispy toast or waffle!
