I dry roast the mung dal first. I use a pressure cooker for preparing this. I put ghee, followed by panch phoran spice, dried red chillies, chopped ginger. After the dry spices splutter - I add cut veggies like cubed potatoes, French beans, cubed Brinjals, cubed pumpkin etc. Add salt and turmeric. Once veggies are sautéed lightly - I add the roasted mung dal followed by water. Close the cooker and cook for 5 mins on medium.
