Square frittata with asparagus, cheddar, goat cheese and garlic—but you can make yours with just about any vegetables and cheeses you want:
Cook some veg and aromatics. Maybe slightly undercook, actually. Spread them in a parchment-lined baking dish. Beat a dozen eggs with some milk, salt, and pepper. Pour over the vegetables, and top with cheese(s). Bake at 325 for 30-35 mins, until set. Turn out, slice, feed a crowd.
Fresh herbs would be good in this too, come to think of it.
