Crispy, salty, and sweet... Those three are defiantly some of the best combinations! And sweet potato fries embody all three of them perfectly!

Slice sweet potatoes into fries (try to cut them roughly the same size, I know it's easer said than done) After they have been sliced let them soak at least an hour in a bowl of ice cold salt water (this process helps pull some of the starch out of the potato making it easer for the water to escape during the baking process resulting in crispy fries instead of soggy ones) After an hour or so rinse potatoes (removing the starch), pat dry, then toss fries in a mixture of corn starch and seasoning of your choice (I have found I really like paprika, garlic powder, cayenne, and a tiny bit of cumin, but season salt will also work if you don't have very many seasoning to work with) While you are tossing the fries begin preheating the oven to 450*, place the baking pan you are planning to use in the oven while it pre heats. Toss fries in a little bit of oil, then spread them on the parchment lined preheated pan. Bake for 20 minutes, toss, and bake for 10 or so more minutes or until the have reached your desired crispness.
