Sweet and tangy apple slaw
Roughly chop an apple into matchsticks (sweet, firm apples will work best for this recipe, I used honeycrisp)
Finely slice the upper portion of a green onion and add to apples.
In a small bowl, whisk together 2 pt olive oil, 4 pt lemon juice, and 1pt Dijon mustard. Season with salt and pepper.
Grate fresh Parmesan over apples and toss with vinaigrette. Serve immediately.
