Easiest salmon bake! Salt and pepper both sides of salmon cuts and make individual aluminum pouches. Add slices of red pepper, capers (and a little caper juice), marinated or just canned artichokes (add a little artichoke juice) and then a mixture of whisked lemon juice, evoo, chopped garlic, salt and pepper. Fold pouches up so they are sealed, put on a baking sheet and put in oven for 30 minutes at 375. Open pouch and fork salmon to make sure it's cooked all the way through. Salmon will be SO juicy and taste like you marinated it for hours! I serve over a bed of cous cous, wild rice or just eat as is! Enjoy!
