Pizza fritta (leftover pizza dough's higher calling). Stretch leftover pizza dough into a very thin somewhat symmetrical shape. Lay slices mozzarella on half the dough. Fold over, seal, and restretch sealed edges to be thin again. Fry until golden brown. Dust with Parmesan. Serve with tomato sauce or pesto.
Alternatively, stretch until super thin, fry, dust with powdered sugar or drizzle with maple syrup.
