I made a creamy roasted garlic red pepper sauce tonight. It takes some time to roast the garlic and red peppers but it is totally worth the effort. This sauce is incredible.
Roast two red peppers in the broiler (keep turning until all skin is blackened). Roast garlic. Blend roasted red peppers, roasted garlic to taste, 1 tbsp olive oil, and 2 ounces goat cheese until smooth.
Sauté minced onion and garlic in some olive oil. Add zucchini noodles before the onion starts to brown. Cook through. Toss with sauce to coat and heat through.
Top with your favorite protein. I pan seared grass fed top sirloin tonight. You will find all kinds of reasons to use this sauce.
