Local grocer was out of sweet Italian sausage, so we went with a mix of hot and cured speck instead to great success! Browned the meats in EVOO, sautéed sliced ramps and broccoli rabe, tossed with cooked pasta, pasta water, grated Parmesan and a little butter. Garnished with more parm.
