Riff on socca - mix gram flour with water, salt, cumin and turmeric and set aside for at least 2 hours. Caramelise 4 or 5 red onions for so long you forget about them. Wilt a bag of spinach. Pull apart some chunks of goats cheese. When ready to eat, slick a cast iron pan with olive oil and then stick under your oven's broiler turned up as high as it will go. Once heated through, remove and swirl in an initial layer of the socca batter - it should set nearly instantly. Once that layer has set, sprinkle through your onions, spinach and cheese. Top off with the remaining batter and then stick back under broiler for another 5 minutes (pulling out halfway through to drizzle with honey).
