Chocolate Chip Cupcakes
this is my go to cupcake recipe, because it is so easy and so quick!
what you'll need:
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon fine salt
2 large eggs, room temp.
2/3 cup sugar
1 1/2 sticks unsalted butter, melted
2 1/2 teaspoons vanilla extract
1/2 cup milk
preheat oven to 350F and position tack on the middle of the oven. Line a 12 cup muffin tin with paper.
Whisk the flour, baking powder and salt together in a medium bowl. in another medium bowl, beat eggs and sugar with an electric mixer until light and foamy (about 2 mins). while beating, gradually pour in butter and then vanilla. While mixing slowly, add half dry ingredients. Then add all the milk and follow with the rest of the dry ingredients. DO NOT OVERMIX! Pour chocolate chips in and fold with spatula. Pour batter evenly in to tins. Bake until a toothpick comes out clean, about 18-20 minutes. Cool cupcakes on a rack for 15 mins, the remove from tin. cool for another 5 mins. Frost with your favorite buttercream.
