While I was dreaming #pastapot #stock was a #brewing ~ #allnightlong ~ using the pasta pot makes the process faster & easier I have found. This has become a weekend tradition. It's nice because I have a rich #broth ready to serve. I just need to add my bites, crunchies, extra flavorings, grains & dinner is served! It's nice because you can make a different #soup every night just by changing up key ingredients, spices, herbs & flavored oils.

Once I strain this ~ I let it cool and refrigerate it - then skim off the fat. #easybreezy

In the pot~ I change up my ingredients based on what I have and rinse but barely chop or even peel my veggies ~ usually a chicken/turkey neck or back, (I've done this with seafood too) onions, garlic, #ginger #turmeric fennel, carrots, celery, #turnips, peppercorns, Rosemary, parsley, green chili, bay leaf, etc... #happyeating #happycooking #chitchaatchai #seasonaleating

How long do you simmer the bones for? :)

I poked it over night for about 10-12 hours ... You can cook it longer too until the bones start to breakdown if you want

Is this soup? How do you serve it? I never knew that there is special type of pot to make pasta. Why chicken / Turkey neck what is special about it.

This is a stock or a broth ...it's the base for a soup. If you use stock/broth versus water - your soup will be more flavor. Using bones brings the most flavor. You can use your leftover chicken or meat bones too ... I usually pick up neck or back bones from the market - they are very cheap. Yes, there is a special pot to boil pasta it comes with a strainer, using it makes it easier as I just life out the strainer and it takes with it all the bones and veggies. Hope this helps.
