Use your favorite pate brisee (pie dough) recipe. Slice tomatoes and lay out on paper towels to soak up excess water for at least 20min. Lightly salt. Rollout dough in your favorite tart pan. Chill.
Then later tomatoes with your favorite fresh herbs like thyme, parsley, etc. Drizzle with olive oil and sea salt over the top. Bake at 375 until done.
