Meringues ? place the egg whites in the bowl of an electric mixer with the whisk attachment. Whisk on medium speed for 2 minutes or until the egg whites form stiff peaks, while continuing to whisk, gradually add the sugar a tablespoon at a time and whisk until the mixture is stiff and glossy.

Using a piping bag about and inch in diameter and pipe kisses on a silpat.
