First blend a slice of bread to make crumbs. Then blend up a pound of shrimp, not too fine, you want some uneven texture, six or seven pulses in the food processor will do. Then mix the shrimp and bread crumbs, with a quarter cup of mayonnaise, two scallions chopped, some chopped parsley, quarter teaspoon of salt, pepper, a little bit of lemon zest. Then divide up the mixture to form 4 patties, each about 1 inch thick. Refrigerate for about half and hour to let them firm up. Finally, sear or grill the patties as you would a regular burger. Enjoy!
