Shakshuka!
Preheat the oven to 375 deg. This slice and gently sauté one onion and two bell peppers until soft (10 minutes?) in olive oil. Add 6 garlic cloves, crushed, and cook for another 3-4 min. Add one large can of whole tomatoes with their juice, crushing the tomatoes with a wooden spoon. Add 1 tsp each of cumin and paprika, and salt and pepper to taste. Cook, uncovered until the tomatoes thicken. Stir in 3/4 cup of crumbled feta cheese, then gently crack 6 eggs on the surface (make sure they are evenly space). Transfer to the heated oven, and cook until the eggs are set with thick but runny yokes (8-12 min). Sprinkle with chopped cilantro, serve with hot sauce and pita for dipping.
