Spring-inspired egg bake with garlic chives, red sorrel, asparagus, parsley and Parmesan. Preheat oven to 300F. Whisk together 8-10 eggs and add heavy cream until the color of light butter. Add salt pepper and chopped parsley, Parmesan, chives and sorrel. In a skillet add a couple tablespoons of olive oil and when glistening, add trimmed and cut asparagus. Cook for a few minutes and add egg mixture. Take off the flame and pop in oven for 20 min. Let rest for 10 min, top with arugula and a drizzle with balsamic vinegar. #notacontest #notasadbreakfast
