Favorite healthy pancakes: just oats, banana, plain Greek yogurt, egg, baking powder, soy milk, cinnamon, and vanilla blended together then fold in blueberries. I topped mine with banana slices sautéed in a little coconut oil, maple syrup, and cinnamon. So yummy!

I made just one serving (about 3 large pancakes) and so I just used 1 egg, half a large banana, half cup oats, 1/4 c plain Greek yogurt, and milk to thin.
