Double Stuffed Roasted Spaghetti Squash

Roast spaghetti squash. Cook quinoa and season with salt, pepper and a little ev olive oil. (rice cooker makes this super simple). Toss clean and torn lacinato kale leaves (stems removed) with extra virgin olive oil, fresh lemon juice, sea salt and pepper. Allow to sit while squash cooks. "Shred" squash with a fork and toss with warm organic tomato sauce/marinara, toss kale with (lots of) freshly grated Parmesan and prepared quinoa. Fill squash shell with kale/quinoa salad, top with warm tomato sauce coated spaghetti squash, top it all with fresh mozzerella and broil until melted.
