Parmesan Chicken Milanese with Creamy Parmesan Arugula Salad
Pound chicken breast until thin. Coat in salt and pepper before bringing though a dreading station which goes in this order: flour, beaten eggs, Parmesan/Italian breadcrumb mixture. Move to a baking sheet with a wire rack on top. Spray both sides of the chicken with cooking spray (olive oil or coconut oil spray). Pop into a 450 oven for 15 minutes. Broil each side for 3 minutes.
Whisk together olive oil, 1/2 lemon juice, 1 tbsp Dijon, 1/4 cup Parmesan and toss with arugula.
Serve arugula over warm chicken.
