S'Mores Drop Biscuits

I wanted to create s'mores that I could serve a group of friends for brunch that would be bit less messy to eat than an actual s'more. These are simple, delicious and a fun new take on the classic favorite!

Yield: 12 // Preheat Oven: 450
1 cup all purpose flour
8-9 full graham cracker sheets
1 tbsp + 1 tsp sugar
1 tbsp baking powder
1/4 tsp salt
1 unsalted butter stick {melted but not too hot}
1 cup milk
1 cup chocolate chips
6 marshmallows
? Using a food processor pulse the graham crackers until flour like texture forms (a few small chunky pieces are ok but should mostly be a fine powder texture) // In a medium bowl combine 1 cup flour, 1 cup graham cracker “flour”, baking powder, sugar & salt and stir to combine // Pour in melted butter & milk, stirring quickly to fully incorporate all ingredients until well combined // Allow the mixture to sit for 5 minutes, the dry ingredients will soak up liquid and batter will become stickier // Stir in chocolate chips // Drop biscuits onto a baking sheet (greased or parchment lined) using a 1/4 cup size scoop, an ice cream scoop with slide release works well // Bake at 450 degrees for 13-14 minutes* until biscuits start to brown on top // remove from oven and set aside // Slice 6 marshmallows in half, place on a small baking tray (or sturdy aluminum foil double layered) and pop into oven for 90 seconds then remove, marshmallows will start to puff up and get soft // using a fork, transfer each marshmallow to the top of a biscuit and smoosh down to flatten slightly // *Pro tip if you have powdered sugar, you can dip fork in sugar in between marshmallows to prevent sticking* // This is the tricky part ✨ magic happens ✨ once each biscuit has a marshmallow top, set oven to broil and place the tray in oven to brown the tops, being very careful to keep biscuits at least 6-8 inches from the flame and watch them carefully- if they start to smoke they can burn in the blink of an eye do not leave unattended // Depending on your oven this can take 10-90 seconds, I keep the oven door open and shift the tray every 10-15 seconds or so until they all get nice & toasty marshmallow tops, watching closely to make sure none burn // serve warm and enjoy! // leftovers reheat really well 10 seconds in microwave or 1-2 minutes in toaster oven
