Guaca-pesto pasta - brilliant for using up leftovers in the fridge or herbs that are wilting a little. Blend basil and spinach in a mixer along with a generous amount of olive oil, some hard cheese and seasoning, add in some avocado pieces (works with slightly over-ripe avocados!) and lime (and chilli, if desired). Cook pasta, add a tablespoon or two of the pasta water into the pesto if it looks too thick. Combine the pasta into the rest, great Parmesan over the top.
