About last night - leftover quinoa in the fridge, it's dhal time! Fry onion, garlic and ginger in butter until soft, add curry spices - whatever you fancy, I usually use garam masala plus anything that comes to hand. Stir in yellow split peas or red lentils, turning in the mixture and then top up with coconut milk and water/stock. Simmer until tender. Coriander and yogurt a must!
