Grilled Cheese w/egg on challah.
Melt a little butter in a pan, scramble an egg to pour in the pan and cook on low to med heat. Meanwhile take out to slices of challah and layer each slice with 2-4 thinly sliced Colby. Spoon egg onto one half of bread. Melt a little more butter and a drop of olive oil in pan, swirl, melt. Gently place both halves in pan over low to med heat until cheese is melted and bread is golden brown. Carefully sandwich the bread and remove from pan to slice and enjoy. Sprinkle with sea salt to taste if desired.
