banana tarte tatin. spread soft butter on the bottom of a oven-safe pan/skillet, and cover with a layer of sugar and vanilla. sprinkle crushed pink peppercorns for an extra kick that elevates the sweetness. then wedge in pieces of banana and "wrap" the top and sides with a sheet of puff pastry. cook on medium/high heat until the sugar and butter just start browning, then into the oven at 400 F for 30 min. rest for 5-10 min, then turn it over to serve. blast the pan with heat and shake gently right before this last step, as it becomes easier to separate this treat from the pan.
