Nothing better than an oozing, runny egg yolk over sautéed greens and quinoa polenta with pesto...quick breakfast! Heat quinoa polenta in coconut oil and top with pesto. Set aside. Sauté veg of choice in coconut oil (I used asparagus and zucchini) then top polenta with veg. Top your stack with an egg!
