Mondays are for pulling yourself together, and so are frittatas: Assistant editor Caroline Lange is feeling very grateful for this one, made mostly from egg whites (the yolks went into a weekend babka experiment), a spoonful of mustard, the contents of her fridge's collection of wilting herbs (parsley! dill!), and a caramelized onion. Lemony-dressed greens on the side for balance.
