#butternut #squash soup with #coconut and #curry
Roast squash cut side up. Scrape out seeds. Cut squash into chunks and add to pot with sautéed onions. I don't peel squash. Add apple, curry, ginger, and 2 © broth. Simmer 30 minutes then whir with immersion blender. Add 1 can coconut milk.
Garnish is sautéed kale and onions.
