Make pizza. Toss greens (here I used arugula and raw Brussels sprout leaves) with olive oil, lemon juice, Dijon mustard, salt, and a pinch of sugar. Crack eggs on hot pizza, bake until the whites are just set. Pile dressed greens on top. Let the yolk run everywhere YUM.
