Baked salmon with sautéed shallots, bok choy, and garlic.
Preheat oven to 375. In a large skillet, heat olive oil over medium heat. Roughly chop 4 (or as many as you want) medium shallots and one large head of bok choy. Mince 3 heads of garlic.
Prep the salmon by coating in olive oil, salt, and pepper to taste. Place the salmon in the middle of a sheet of parchment paper, and top with sliced lemon. Create a steam packet with the parchment paper, place on a sheet pan, and bake until salmon is desired doneness.
While salmon is in the oven, sauté the shallots in olive oil for 5 minutes or until browned and tender. Add bok choy and cook until wilted (about 5 minutes). When the bok choy is almost done, add the garlic and cook until fragrant. Season with salt and pepper to taste and serve with the salmon
