Cauliflower quinoa:

Season cauliflower with garlic powder, salt and pepper. And drizzle olive oil over. Cook cauliflower in the oven at 375. Stirring occasionally until golden brown.

Simmer 1/2 a cup of quinoa with a cup of water and a table spoon of tomato paste (for added flavor) in a medium sauce pan.

Mix all above ingredients together after they are separately cooked. Add ricotta cheese. Finely chop chives and add on top.
