Clean Out the Pantry, Ep. 3: Risotto with pancetta, garlic, chicken, Parmesan, and topped with leftover peas with pesto & pancetta.
I baked the chicken with salt, pepper, & olive oil a couple of days ago. I chopped & cooked the pancetta, then added the garlic & chopped chicken. Then added a little extra olive oil before adding the arborio rice. Cooked for a bit, then added some Chardonnay. Cooked until the liquid was absorbed, and then started gradually adding the chicken broth. I added some Parmesan at the very end. Topped with the peas, which I reheated in the microwave, and then sprinkled a little more Parmesan on top.
