First tomatoes of spring stuffed with sautéed onions, garlic, chopped kalamata olives, parsley, mint, oregano and panko bread crumbs. Bake 40 minutes @325 until tomatoes are soft and stuffing is browned. They are delicious warm and @ room temperature and are even better the next day. Great make ahead side dish for a brunch or dinner party. Can't wait for the sweet tomatoes of summer!
